Deliciously soft fruity squares perfect for afternoon tea, picnics, walks or just an everyday treat!
250g white spelt flour
50g wholemeal spelt flour
300g porridge oats
100g light brown sugar
3 tbsp golden syrup
Pinch of salt
300g fruit ( This could be any fruit of your choice, fresh, tinned or frozen. Or use your favourite jam, mincemeat etc)
Melt the butter, sugar and syrup in a large saucepan.
Remove from heat and stir in the oats, flour and salt and mix thoroughly.
Spread half the mixture over the base of the lined tin, approximately 11" x 8".
Spread or scatter chosen fruit over the base and then cover with remaining oat mixture, pressing down well.
Bake in preheated oven 200c/180c fan/ gas 6, for 25 minutes.
Cut into 12 and leave to cool in the tin.
