Fruity Flapjack

Deliciously soft fruity squares perfect for afternoon tea, picnics, walks or just an everyday treat!


Ingredients:

  • 250g white spelt flour

  • 50g wholemeal spelt flour

  • 300g porridge oats

  • 100g light brown sugar

  • 3 tbsp golden syrup

  • 375g butter

  • 1tsp cinnamon

  • Pinch of salt

  • 300g fruit ( This could be any fruit of your choice, fresh, tinned or frozen. Or use your favourite jam, mincemeat etc)

Method:

  1. Melt the butter, sugar and syrup in a large saucepan.

  2. Remove from heat and stir in the oats, flour and salt and mix thoroughly.

  3. Spread half the mixture over the base of the lined tin, approximately 11" x 8".

  4. Spread or scatter chosen fruit over the base and then cover with remaining oat mixture, pressing down well.

  5. Bake in preheated oven 200c/180c fan/ gas 6, for 25 minutes.

  6. Cut into 12 and leave to cool in the tin.
